They're called Basilisks. Here's an easy strategy to killing them:
1. Try to lure one away from the rest by drawing agro. IE hitting a wall near where there's several of them.
2. Kill him. If he gets up on his hind legs for a second, roll away before he spits the curse cloud out. Wait for the fog to clear, then go in on him again.
3. Repeat.
If you get multiple on you at once, it's pretty much the same, except you have to be mindful of all of them to make sure you don't inhale some of that dank curse smoke.

I don't find them hard its just that they've gotten me 3 times with like instant curses when im just trying to run past them

When their throat swells up, stay the fuck back. That's the attack that results in thick curse fog, which fills up the bar really fast.
Yea I know, I havent really been having that much trouble I was more just venting my rage at the fact I have to walk ages to fix the problem.
But I decided just to give new londo another ago while being cursed so I don't have to worry about transient curses or using a cursed blade.

Dark Souls has the most variable learning curve ever depending on the player. My first playthrough took me forever.
Think of it as a good thing, if you are progressing through the game slowly but still enjoying it. You are getting more out of it, in every sense of the term.

I'm 40 hours in and I've killed Nito so maybe.

Don't use min-maxed armor, use something that looks good. With that armor you'd have to do NG+ anyway.
Does the wizard dude in new londo who can cure you curses via humanity sacrifice offer anything else apart from that? would it be bad if I killed him?

He sells transient curses for 1k souls, only other merchant that sells them is the female undead merchant and she sells them for 4k souls.

You don't have to go to him to get cured, just buy some of the stones that cure curse from Oswald in the gargoyle tower and you won't have to run through New Londo every time you want to get cured.
Yea I don't need transient curses cause im playing new londo while cursed so Im getting a lot of excess ones from ghosts, so he doesn't help you out later in the game or anything?

The only thing minmaxed in that armor set are the gloves. Brass and the guardian pants are fabulous together.

Minimize/maximize. It's the concept of getting the most you can out of the most optimized set of stats. If you invade somebody that's using armor from several sets, they probably min-maxed their armor for as much poise/defense as they can get with their endurance level.
