It's not hard to parry with a medium shield though.

I never found Leo Ring useful since instead of doing a counter you can just riposte on regular enemies

I don't think there are any other bosses you can do before Gaping Dragon where you can cut off their tail. There is the Hellkite Drake but you can cut his tail off with arrows and you're nlikely to have killed him yet.

The best part about a parrying dagger in the offhand is that you can make it lightning +5 and surprise people with quick jabs. Gives you a massive damage boost when you attack while the enemy is attacking. Parrying is harder to do because you have to parry at the exact moment of when the enemy is landing the attack, but doing a "counter" (aka landing a hit while the enemy is attacking) is for the entire duration of the attack animation. This makes it really really good against enemies with longer attack animations. You already do a 22% damage bonus against enemies who are attacking, and the leo ring makes it so you do 66% extra damage on such attacks, which is a huge buff. You might as well have the capability to do a mini-backstab without needing to actually backstab at all, especially if you add additional damage buffs like power within. It's especially deadly if you go without a shield or make it so you appear more open to standard attacks - then you'll get attacked more often by other players which gives you more openings to deal bonus leo ring damage. The fun fact of the day is that leo ring works on crossbows/bows as well, so its great to use if you are a crossbow user to supplement the damage you do with your main weapon.

Of course I'd rather they not go super fast like they would IRL for my sanity against PvE but I feel like they'd be a lot more useful if projectiles actually traveled at faster speeds.
