Using R1 is like, the most basic form of attacking... I don't think you could get any further away from having a tactic than just using weak attacks

It depends on the weapon and the context. Smashing a bleed weapon into a shield is a very viable way of taking somebody out, especially if they don't understand rolling or just want to sit behind their shield. Poise locking is also best done with fast attacks.

I do that against hyper PW builds quite a bit. Usually I use a target shield and muramako because i'm a special snowflake but if I see someone activate PW I throw a Lloyd's and then whip out Havel's Shield and just stand there and stare at them. Watching them increasingly panic as their health whittles down is so funny.
I should pvp in reverse. Shield main hand, sword offhand.

The first elevator in Dukes (that leads to your first Seath encounter) has dissapeared and I can't find any switch to bring it back down.
I'm thinking of doing a full [sp]giants[/sp] run with the Demon Greataxe, seeing how far into the game I can just tank it.
And now the Swag Sword refuses to drop.
is the Church the best farming spot for it?

Depends, really. How early will you use full Giants? Will you be able to stay below 100% weight? If so, you'll theoretically be okay, especially if you learn how to parry well. If you decide to 2h it, you'll run into trouble around Sen's, probably. If not, you'll be fine until probably BoC, which will destroy you in your heavy armor.

If you're not too attached to that character you could just keep trying to get that drop. If you don't get it, delete it and start over again. Only likes like five minutes to get down there if you go Firelink > New Londo > Valley of Drakes > elevator down to Darkroot. Then you just get him to fall off the cliff.

I got tired of mix, matching and upgrading armor pieces (And wasting alot of good resources) to try and maintain a fast roll, I finally said fuck it and decided to go full Havel's.
Comments and critique on what I should do next?
