It's hard to do a dex focused build and parrying in PvP when you get lag-stabbed all over. I don't how many times I've tried to back-stab only for the asshole to teleport behind me. Damn.
Is the regular force miracle any good in PvP? It seems like it could be useful for anti backstabbing

From what I've observed, the most common use of it in PVP is to knock people off the map and kill them. Especially against hackers and such that won't take damage from traditional methods.

The best anti-backstab technique is to man up and use the greatsword. 2H R1 = slap those asshugging cowards with 2 tons of cold, hard iron.

Either that or you do it the cowards way, get a bunch of dung pies and then either run down the stairs and lure him up and throw them at him or go around to darkroot basin and throw em at the door when he bugs up against it. The second way is easier because you won't have to keep him there but if you do the one where you lure him up your gonna have to move in and out of the tower so he doesn't go downstairs again or the toxin effect will wear off. Either way, easy kill.

That sounds incredibly time-consuming for an OK ring and 3K souls. Honestly, if you have even a decent weapon you can backstab him to death in 10 or so stabs. Just frontroll past him right as he swings, then you have a good 3 seconds to get the stab.

Last one has about 80 HP left. Somehow during the fight I switched my item from Estus to white soapstone. Try to take a swig in front of his highness' face. End up doing a confused gesture instead, and getting cleaved in two immediately afterwards.

I keep getting invaded by Darkmoons though, which is strange, since I'm almost positive I've [I]never[/I] been indicted. This character's old, though, I may have done some shitty forest PVP ages ago and got indicted once or twice.

Lucky. I want to be invaded by Darkmoonies but even though I've been indicted about 15 times, over 60 hours of playtime I was visited by two. :(
Darkmoons are no fun. They don't drop any humanity, only a pittance of souls and just keep invading over and over. I absolve my sins just so I don't get them ruining any proper PvP I might get.

Just a few tips. Use a greatsword or higher due to the good Str scaling bonus and because they have the best physical block, I like Tarkus' Greatsword. With the Str scaling not being as beneficial after 40, two-handing it will put you at around 27 Str for best stats. You'll need to be fast-rolling so don't get too heavy of armour and along with the big sword you'll need plenty in End. Definitely use Pyromancy because you'll need some extra help, have it in your off-hand and just drop the two-handing when you want to cast.
Two-handing is not ideal so there's no great builds, but you can make something that works.

I used to do this but instead of timing a roll you might want to consider parrying
With a decent shield and stamina you can just block his over-head attack. I find circle-strafing around him works too, and doesn't mean instant death if you fuck up a roll or parry.

When I say decent shield and endurance, I mean it's possible with around 15 endurance and a dragoncrest shield.
I get some pretty weird UI glitches sometimes.

Anyone mind explaining what stat scaling means in Dark Souls? I've seen on quite a few forums people saying "oh do/don't use this because of its stat scaling blah blah" and I'm terribly confused.

S > A > B > C > D > E
The more scaling the weapon has in some stat the more bonus damage you get from that stat. IE a weapon with S scaling in strength and E in dexterity, you might want to put all of your points in strength up to 27 or 40 to maximize your weapon's damage faster.
Starting a Syrio Forel run, Wanderer set, rapier (or Balder side sword), no shield. It was hard at first getting used to not being able to block. Some guy invaded me, probably new to the game as he was half naked and only using a basic pike. He charged in to attack and I parried him, then he tried to backstab me and I backstabbed him. He had sliver of health left when he stopped moving. I backstabbed him twice but he didn't lose any health.

So if I'm for example focusing on dexterity then I should pick weapons that are closer to "S" in the dexterity spot?

You have your character's stats for Strength, Dexterity, Intelligence and Faith. While there is a minimum stat you need for most weapons, they also have a scaling stat similar to the damage they do. This scaling is indicated by the standard letter ranking of S, A, B, C, D and E in order from best to worst. While it may seem like one weapon does more damage than another, the scaling from increased stats can give huge bonuses to damage that may be overlooked by new players.
A good example is the Black Bow of Pharis. While it seemingly has very low damage at 81, with only 34 Dexterity it's S level scaling adds an additional 268 making it the best option by far.

If you go into a weapon you'll see letters under the stats (S, A, B, C, D are all of them I believe). Stat scaling will, depending on the letter, boost the power of your weapon by a certain amount (With the order I listed the letters from left to right being strongest to worst).
This means if you're using a weapon that has an S under the dexterity stat that you're going to want to pump points into dexterity if it's the weapon you plan to use throughout your play-through. Also some weapons when upgraded will gain better stat scaling, and adding effects to your weapon such as lightning can either reduce or completely remove stat scaling from the weapon.
I keep dying in the church. There is loads of really strong enemies. How do I upgrade my weapons or something?

Buy (off the blacksmith) or find titanite shards, and choose upgrade weapon in the blacksmiths options.
All these new people brought in by DSII(or some other reason, I dunno). I feel like I should make a sunbro and stay at parish level to help out a bit.
