CK2 is easiest to control but the depth underneath the controls, and the resulting time it takes to have a true understanding of the game is quite a bit more than EU3. Easy to learn, hard to master applies with most paradox games, but more so CK2 than EU3, IMO.

Well I certainly find it easier to succeed in EU3 than CK2, it's a pretty simple game once you understand it and I think you will find it quicker to learn EU3 and how to best achieve something in it than you would in CK2.
So just bought Hearts of Iron 3. Any essential mods or information I need to know? I know Paradox games are apparently hard to get into.

Be careful, however. Combat outcomes in Hearts of Iron are determined in a radically different and colorful set of modifiers than they are in any other Paradox game.
A Victoria 2 aggressor with a million man army in one province can conquer the world. A Hearts of Iron aggressor with a million man army in one province will lose every battle in it.
I don't think Their Finest Hour is really needed.

IMO it has better content updates and additions than FTM and SF. They should release a proper collection for lower price, tho. As it is, HoI3 is pretty unattractive to those that aren't willing to give a few more buck for their bangs.
Come to think of it, now that people are finally getting up to date with all the DLC, would it be plausible for FP to set up a multiplayer session or two? I'd totally dig a Victoria 2 or HoI3 multiplayer game.

IIRC A House Divided optimised a few things, and actually made Laissez Faire somewhat more viable. I don't know victoria 2 as well though so I think someone else would be able to give you more of a rundown of what's different.

if the fief is the same rank as yours(king giving kingdom) the realm will split. if it's a lower rank(king granting duchy) then they will become your vassal.
