In a lot of REAL anime and manga, blood type is just as important as hair color when determining what traits a character has, almost like a way to discern their personality, even if it never comes up in the work itself. When character concepts are created, body type, hair color, and blood type are some of the first things outlined in typical manga bio writing because of how they determine what a character will be like without having to read paragraphs about their personality first.

EDIT: It's not done much anymore, but it is a "traditional" thing real Japanese writers do, to give their characters a little more depth, I suppose, which is what Katawa Shoujo aspires to be: Traditional.
