I wonder how they manage the whole random monsters thing, tech wise. It's fairly easy to make static randomized monsters by having a bunch of pre-set sprites in images of legs, heads etc but it would probably get a lot more complex with animation, especially when decided what draws on top of what and the such.

Uhm....no?
As long as they have some sorting system in or items/parts designed only to be matched with others.
So for example, there is set of 20 four legged creature's main bodies, and to it, there is possible 15 different pair of legs, 30 different heads, 50 misc items (ie. Shell on the back), 32 tails.
You just set specific "point" on the main body, where all of additional things will be glued together.
Then, randomized hue selector comes to game, deciding what color it will be.
Things like layers (what goes on top of each other) is pretty obvious now.
Thats how it works imo.

This creature looks like a potential mount. I can see the Avians or a lizard race using them like humans would use horses.

No, not so simple. How would it work well with animations? If a creature has a natural "bob" to it when moving, for example, it'd look very weird when the legs and arms are statically animating in relation to the main body.
Also, how do you make sure problems with the legs being higher up than another body part? Depending on the scale of each piece it could be easy to end up with such a problem. It gets endlessly more complicated when you consider things like have creatures with any number of legs, needing to sync the animation times to create a realistic trot, or having 1 leg placed in front of another in proper walking style when bipedal instead of hopping with animations playing at the same time.
How could an attack animation be achieved? Depending on the size and shape of the creature it could look very out of place.
Another major question is things like AI. If you could randomize a creature to be any size and shape, and change it's abilities, you are going to need to have an AI that can compensate for this.
Perhaps each piece of the monster dictates part of the AI, wings call use of a flight programmed AI while legs will denote walking.

Most of those look like deformed/mutated pokemon. :v:
Especially the one in the bottom righthand corner.
I hope you can export a terraria save into starbound and you'll find ruins of your terraria world in starbound, since it seems to be so similar in looks.
Don't know why or how it would happen.

confirmed a while ago, radiation and solatrus from HS are working on starbound's music

The one in the top right looks a lot like a fusion between zubat and magnemite as well, just recolored.
