Well there's going to be another slight difference: Items like chests and some furniture will have the respective race's visual flair as well, so an Avian chest would look different than a Human one.
Kinda sad there's no gameplay differences, but I can see why they didn't do it
Tiy explained on Starbound's forums how it will work
Hi guys,
Let me explain the current plan with races (as with everything, it's subject to change).
Your race choice won't have a stat based gameplay affect. However,
Crafting in the game requires that you unlock each item you're going to craft before you craft it, you do this by finding a blueprint which is permanently added to your list of craftable objects.
For example, a chest might contain blueprints for a chair, after you activate the blueprint the chair is added to your list of craftables and you can forever craft that chair if you have the right ingredients.
The player starts off with quite a large list of craftable items. The list of starter items is unique per race. Though players can eventually learn to craft items that belong to other races (particularly by raiding dungeons/villages that belong to that race).
For the most part though, your character choice permeates through the kind of objects you build and thus the kind of materials you'll require most often. This ensures players aren't all after the same set of items and adds an element of team work to the crafting system.
On top of this, often sets of armor/weapons have bonuses based on the race they belong to. An example might be Avian armor reducing fall speed. Again, whilst every race is capable of crafting (and wearing) every other races items (should the player unlock them all), in the early and mid game the race you choose helps to define the armor perks you create and facilitates trading between players of different races to get the stats they want before they're capable of crafting that armor themselves.
Let me know what you think of this system.
This is how I always pictured it, Tiy's got the right idea.

Blueprints eh? That's something that games like Minecraft and Terraria seemed to lack; for those games it was as simple as "if you have the right items and crafting stations, you can build it", like the characters already knew how to craft the items in the first place. Considering that the main characters in Starbound are essentially refugees from their destroyed homeworld, it'd probably make sense for them to not know every single schematic and blueprint from the start. It also gives a bit more depth to the progression, with recipes being present as well as the requirements of items and crafting stations.
Also, I hope there's a consistent story-arc in Starbound, as opposed to Terraria where it just drops you into the forest with just a pickaxe and a regular axe, with only a practically-negligable understanding of what's going on in the world.

They already confirmed there's a story, and not only that, there's going to be story-based worlds/levels. On top of the randomly generated areas for players to screw around in.
Yep, that's a good thing. Also, in regards to the sizes of the worlds, d'you think they'll be random in size? Personally i'm hoping that the worlds are sizeable yet not too big, since Large worlds in Terraria can be a bit too daunting for some.

Hey, it's a plumbloom!
Anyhow, I've been lurking for quite a while, I'm honestly looking forward to it.
I apologize if I've missed this small bit of information, but does any of you know the estimated price this will be released at?

She wants you to feed her, Seymour (feed her all night long). But beware, 'cause she's a mean green motha from outer space, and she's BAAAD.

This one is NOT a gif thankfully
I don't know if I should find the plant people terrifying or cute.
The plant people are nice. Too bad I'll probably be going human since they have a more of a utilitarian-look to them, in terms of armour that is.

Why not both?

Be a plant person, study up and learn how to craft human armor. Or trade with people.
