Well, the opportunity to keep Stun Spore is long gone, but looking through, Reflect sounds like it could be useful in helping Butterfree taking a hit/team support.
I think you can buy Reflect, so no worries about there only being one in the game.
I have a really good full EV trained team but have never done any competitive, how do i get into online battling? or is most of it done with pokemon online these days.

Pokemon Online is the easiest way to get into comp, but unfortunately, you don't see many players being imaginative or fun, but it's the same cookie-cutter stuff almost every team, and it looses its spark quickly, no matter what tier you're in.
People still play comp on wi-fi, but it's a lot more time-consuming, especially if you don't use Pokemon editing programs. You find a lot more pubbish people on wi-fi though, and not having tiers might make things even messier than what they would be on PO. If you want to play comp on wi-fi, you pretty much have to organize a match with a friend or something with a given tier or set of rules.

i played blue and all of the advanced generation all my childhood, and didn't find out about johto until hgss (sadly) so i always thought skarmory was hoenn and all the others were kanto

So I just got black and white after quitting pokemon after gold and silver.
Is it just me or do the obligatory starter birds (pidgey sparrow pidove) have no survivability? Every time I use one they end up low health or dead.

They usually get knocked around with low Defenses, otherwise they're pretty reliable for dealing damage quick. Pidove actually has a higher base Def than Pidgey and Spearow plus it's got a decent Attack stat, but the tradeoff is that it's slower.
That might be the reason why you're having some troubles, when it can't get an attack in before the opponent.
For me, I waited for a while (after 4+ badges) before I started looking for a Flying type, just cause I found other Pokémon could do the job just as well.

Spearow is decent, and you missed the awesome ones (Taillow and Starly).
Still, the starters, Patrat, Pidove and the elemental monkeys are the worst Pokemon in those games, try to get better alternatives if you wish.
the starters are decent
They are inferior to most starters and most wild Pokemon of the same type. Oshawott gets a pass because Water Pokemon are somewhat rare, but in any case, inferior to the freaking Tentacool stand in.
Also, Woobat is worse than the Zubat line, and Blitze is quite limited but usable. Other than that, most things are very solid; grab a Darumaka and you'll see that in action.
