Bought P4Arena for extremely cheap, well, 50% less than in stores. I'm really enjoying it, but is there any reason why most characters don't use their ultimate personas?

Probably because their original persona's appearance are more memorable compared to their ultimate appearance. Mostly due to players spending most of the game with the original than the ultimate personas and the fact that some people may never see a certain character's ultimate persona.

For P4, it would mean that any of the Social Links being completed canon. I think they wanted to avoid that.

But Teddie's Social Link 10 is canon

Except Teddie's is story based and levels automatically, unlike the other Social Links.

Because it's impossible to not complete Teddie's social link in P4.

Whereas if you wanted to, you could skip everyone else's.

Hm, I forgot about Teddie. I do know that the Ultimate Personas were originally considered, since the voice test has them all call out their Ultimate. Teddie not having his Ultimate could either be an oversight, or they have some excuse on why he or anyone else might not have their's anymore.

1. Drain it
2. Simmer it
3. Leave it in for a while longer

Having relatively recently finished Nocturne for the first time, and currently playing through Digital Devil Saga has me excited about Strange Journey Redux, as well. I never played the original so I hope all the changes they've made in this version are only for the better.
