2 was great, but the controls on agent 47 are terrible. (good game if you learn them, though) Blood money is easily the best, though I've not had the chance to try contracts, but it's apparently very nice, too.
Contracts is good, my second favorite. Blood Money being the first.

If you can nab a copy of Contracts, do so. I went from Blood Money to Contracts, and loved it. Hitman 1 is pretty terrible, and 2 is regarded as a great game, although I personally played it after Blood Money and couldn't get into it at all.
that's the funny part. i kinda grew up on hitman. i love 2 even though as a game it's kinda crap at how wiggy it can get sometimes. contracts fixed the issue with sneaking taking forever i'm pretty sure.
the reason why i love them so much is simply nostalgia. well that and hitman was the first series i played that was rated M that included unapologetic ultra violence.
if you want to segue into hitman 2 i suggest breaking yourself in with contracts first.
The sniper challenge is pretty cool, but 50,000,000 points for the top unlock? There's not that much content to it.

Contracts has a single licensed track, that appears once in the whole. And for some reason they refuse to remove it. :/

I played Hitman Absolution at gamescom today and it's far from consolized. It has a menu with full graphical settings from texture filtering to anti-aliasing to quality settings per feature. It did have just an xbox 360 controller in the key options menu, but I think that was an oversight since they offered only mouse control at the booth.
The gameplay is really quite similar to BM, except for a few UI changes. I don't know how to close to final the build I played was, but it displayed points in the upper-left corner which were affected by actions in the game. These actions are also reflected upon when you've finished a mission.
I played the Chinatown level from the trailer and solved it by disguising as the drug dealer and luring the target to an empty alley where I beat him to death. The melee fighting system involves a quicktime events where you have to quickly press a key to successfully attack someone. I think this is greater than before, because it adds an extra challenge to fights instead of just spamming the left mouse button. Other ways of completing the level I noticed were using the sniper from the drug dealer's appartement and blowing up his car. Another way was demonstrated by the guy next to me who just shot up everyone with an SMG. If I recall correctly, however that didn't go very well for him.
Some other things I noticed is that the Chinatown level is the second level in the game and just like in Blood Money, the game punishes you for killing non-essential targets like guards and civillians by subtracting a large amount of points.
I don't know if this was shown in any trailers or other coverage before, but the game will feature a semi-multiplayer gameplay mode where you can set targets to be killed in certain ways (up to 3) in any level as a challenge. You can even require players to have a certain disguise while doing so.
It looks really good on the PC with the new DirectX 11 effects and is nothing short of a true successor to BM for me. I can't comment on the voice of 47 in the cutscenes because it was German dubbed and it was pretty loud there.

DS3 is gunning for another generic shoot the aliens TPS because they realized they can't even do basic sci-fi horror right anymore. Hitman 5 is giving players the ability to engage in combat while retaining EVERYTHING the series has done well prior.
There's completely changing what the game is about and then there's adapting.
