Hmm... Good servers off the top of my head and the ones I've been on are

Stormreaver - Alliance/Horde (steer clear of hobbs's guild though)
Illidan - Horde - I'm on alliance on this one though so if you want to roll on my server.

All the other ones are horribly unbalanced when it comes to Horde/Alliance ratio. The two that I listed are PVP servers which I'm sure you understand what that means.

Well if it's your first character I'd recomend a normal (PvE) realm.

as for the class, do some reading yourself and make your own choice;

In the long run I personally would not recommend a PVE realm though. To each his own though
