I think all animals should get a major overhaul with wild and domestic variants like the wolf. You have to domesticate sheep cows and chickens to get wool milk and eggs from them. Pigs can be ridden and controlled when domesticated. All domesticated animals could breed, important for pigs if you want to get meat from them. Wild animals will become more rare so you'll need to set up a farm and domesticate a few if you want a good supply of items. Wild cows will kick you if you try to take milk from them, wild sheep and pigs will ram you if you hit them, wild chickens will just run. You'll still be able to get death items from wild animals like feathers leather and meat.

I've got a moat of lava on top of the main tier of my castle right now, there's grass level with both sides of the area. The cows love spawning near the lava on the grass all night long, doesn't matter where I am I hear one die every two minutes in the lava.

it's also fun running in my front door when being chased by spiders, they climb up the wall and try to stay above me and catch fire

Looks really awesome, I'm loving the animations. I would prefer them to be a bit more exclusive, though. And yes, wild ones at night should be hostile.

Keep in mind Jeb's probably running it in a special debug state where wolves are common and other features are in deliberate easy-mode to make it easy to test.
Simple things that could be added:
- Naming your wolves (a little multiplayer style name would appear above them), with a little symbol indicating their gender (like in Pokemon), just for kicks
- Wolves grow (cub, adult, grizzled) over time, like say every 3 Minecraft days they are alive - and they grow in health and power
- Ability to dye your wolves
- Some sort of item which you could use as a wolf controller (like the antlion bait in HL2), left-click to attack here, right-click to gather to me
- Knowledge of your wolves' health (maybe under or next to the name)
- Randomised wolf stats? (speed, health, attack, indicated by wolf visuals - for instance their model could be slightly leaner if they were stronger)
On the subject of taming, I think taming should be a bit like fighting, but with visual feedback. Wild wolves would have a tinted skin making them look... wild, and as you attack them with ... something (a taming whip?), they slowly lose this and become less "wild".
Cooler but more complex things would be finding packs of wolves roaming, that sort of thing, rather than singular ones or having male and female wolves breeding to create babby wolves, yay!

It's not like you have to use beds and tame wolves or anything. Minecraft is a sandbox game, remember? You can make it as hard or as easy for yourself as you want.
Hopefully there will be some sort of Doghouse thing where you can put your pets to stay in. I don't want to go into cave and have 50 wolves hopping into lava.

I love the water sprinkling, its so cute. But I don't think achievements are a good idea, it, in a way, shows some limit to the game. If Minecraft is ment to be unlimited (to some degree) then adding a limiting factor doesn't seem right.
I just hope they are passive in attacks, as in attacking only things that you are engaged with.
And I hope they run away from creepers. I don't want to have to finally find and tame a dog only to have it blow itself up right away.

The video probably had the spawn rate upped just to demonstrate how they worked ingame in larger numbers than 1.
On a different note, I really hope you can make a cage or something to keep them in. When I go cave exploring I don't want an AI following me, falling into lava, off ravines, etc. They also can't follow you if you swim up a waterfall or use a stack of blacks to escape a cavern.
