Yeah, on No Mercy, other than taking out the security cameras, and the one security guard, firefights only start after you retrieve the first sample.
Conterfeit has a sleath part at the beginning, you take all the ostage, don't go near the front, and kill quietly the two first wave of cops. But after that, that's it.
So is there really no way to fully stealth Counterfeit? Like in order to get Pacifist?
Seems like just running around trying your very hardest not to shoot anyone is a HUGE PAIN IN THE ASS.
Is it possible to just have the rest of the team do the shooting while you purely just do objectives? I can see that working, but it seems like everyone playing has to not kill.

I believe that's how it can also work. As long as you don't harm anybody, you should be eligible to complete the challenge while your team members do all the killing. However, if all four of the players want it simultaneously, then the only way to do is is by cycling around the map with four doctor bags.

And even one particular Overkill member even stated that Thick Skin is a "noob" player upgrade. Most of these players who hold this belief will use Extra start-out ammo; which is an effective upgrade regardless of your perspective.
The thing to consider is that Thick Skin increases your life, okay, but damage can be mostly avoided if you play smart. If you play smart, then Thick Skin can seem redundant, because if you're a good player, you'll use cover and minimize the damage you're taking to begin with. This is where the reputation of it being a player upgrade for newbies comes in, because a lot of players simply take it because they can't avoid damage.
The only time Thick Skin has an almost positive effect is in a heist like Heat Street, where you can't spend ammo fighting every barricade, and running is almost the only option, which is going to be a precursor to taking lots of damage.

A lot of times I feel that I need Thick Skin to compensate for my aggressive shooting style. I'm getting better at conserving ammo, but I still can get in to some bad situations regarding ammo. Heat Street, Slaughterhouse, and sometimes Undercover, are the only heists I feel I can't really get away with using a different perk.
95% of time, I have a medic bag. I just always find that it helps me out more than anything else. It used to be ammo, but now I've gotten much better at not spraying bullets, and picking up ammo from cops. You can't pick up health though, so it's my default, go-to perk in that category.
So I bought Payday finally, played many many many games with my friends and having a shitload of fun. But what level would you guys recommend I start tackling the harder difficulties? I'm on level 29 atm and I've placed emphasis in upgrading Support.

I'd wait for the Reinbeck.
It's pretty easy to score a headshot with, even if you aren't aiming, given you aren't too rediculously far from your target.
Also packs a lot of damage.
I always switch up my primary, as I can't tell which one is my favourite, the AK, the Armcar, the Brenner, Reinbeck or the M14
Yeah I've already unlocked the Reinbeck and the first recoil dampener.

Oh, a question about the Mr. Nice Guy perk, does it increase ALL cash gain by 20% (including cash bundles and piles)? Or only cash from objectives and mission completions?

It increases all cash gain, even little money bundles. However somebody else needs to have the perk active in order for you to receive any benefit.

Oh god, when I got info that you can do Diamond Heist solo on Overkill I attempted it..... and solo'd and leveled up about 10 times. Amazing.
