If you open the inventory you can alt-tab without pausing.

Well then build more efficiently. Make yourself the stairs shaft first, then create the floors and frame, then walls and windows, and finally all the details.

I have a feeling time is supposed to remain static, and instead you'll just do different shit at night
"cut trees and farm during the day, work in the mines at night" seems to work pretty well, but I can see what you're saying, the first few days usually do result in sitting in a house for 15 minutes because there's not enough resources to mine, usually not having enough coal for torches or not enough wood
overall he might not need a way to speed up time, but instead giving night more stuff to do eventually, as it is now it confines you to a mineshaft or a house if you don't have enough resources
I'm sure there's shit down the pipe, this is a good time to pull the "remember, it's an alpha" line, since this is exactly where he probably plans to add shit to eventually

If I wanted to build something irl, I'd either get a construction simulator game (No, Minecraft is NOT a construction simulator) or else really build something irl.
