I'd recommend the three Gran Turismo titles available for the PS2 if you can get ahold of them.
Also, remember that it's backwards compatible, so there's nothing stopping you from playing a PS1 game you like the look of.

Mercenaries: Playground of Destruction and Bully are pretty cool

Anyone said Zone of the Enders yet?
Let's see... Final Fantasy X/X-2 and XII, the Kingdom Hearts games, Dark Cloud 1/2, Rogue Galaxy, Shin Megami Tensei: Nocturne, Persona 3 and 4, Dragon Quest VIII, Okami, the Tales series, the .hack games, Disgaea, Steambot Chronicles... So many great JRPGs. For a more western experience, there's always Baldur's Gate and Champions of Norrath, which can be played with a friend.
If you're into action/platformers, there's the Maximo series, God of War, Devil May Cry, Ratchet and Clank, Jak and Daxter, Beyond Good and Evil, Zone of the Enders, Onimusha, Prince of Persia, Metal Gear Solid 2/3, and Sly Cooper. I guess you could go ahead and lump Resident Evil 4 and the Silent Hill games in there, too. Ico and Shadow of the Colossus are very platformer oriented.
Oh yeah, the Grand Theft Auto games. Everyone has their own opinion, but my favorite's San Andreas because of the character customization and having stats. If you're into racing, my favorite is Midnight Club 3: DUB Edition Remix. There's also a very strange racing/RPG hybrid called Choro Q if you're into quirky games. Speaking of quirky, there's the Katamari series, a game called Chulip where you go around kissing people, and many other strange games on the PS2.
The PS2 really has something for everyone.
