I bought this a while ago, never really got into it, until yesterday.

There is no free will. You either have full control, or no control at all. There is no way to add a dynasty member to the playable group after they have been removed as far as i remember.
Your son becomes the corresponding class of the building he was an apprentice at. If he was being taught at a bakery, he comes a patron, and would therefore not be able to work at the smithy. If that is not what you meant, i assume you mean why you can't add him to the production team despite him being the correct class. I never really understood why it was done like this, but only the original owner of the building will ever be able to produce there, until he dies.
Infact, i don't even recall if a later dynasty member could continue working at the same old building. I assume so, but my memory is failing me. 95% sure.
Is there any mods that allow to re-add people to the group?
Yeah, I actually had him 'apprenticing' at my Smithy, so I guess it's only one family member at a time. Which is a horrible idea, imo.
