Is that your rumor? I haven't seen any of those on Endor, and the Gorax is the only spawn that isn't in a dungeon/cave. The spawning system right now in the Emu is mostly just static spawns in dungeons/caves. The spawns on the surface are random spawns of static spawns in caves, so anything you find on the surface can be found as a static spawn in a cave and visa versa. Then there are a few static spawns on the surface of each map.

Arachne widows only spawn on endor according to pre-NGE wikis and people on the forums, but I just can't find any.
Still trying to get jedi, process is really slow and im beginning to feel a little jipped :/

How are you being jipped? Jedi is the most powerful profession in the fucking game.
If you want to go play it without doing anything and having fun go play the NGE.
It's going to take a while, hell. It's going to take months to be honest, hell it might even take a year or so depending on how much you play.

They spawn there on live but there aren't any there on Nova, so if you got that as a rumor, something went wrong.

A bit of it depends on luck.
Disclaimer for anyone that didn't play Pre-CU, CU, or NGE, this game is not about being a jedi. This isn't The Force Unleashed, the idea is to be a person in the Star Wars universe. Whether you want to be an entertainer and sit in the cantina, crafter and make shit, or fighter of any sort and fight, everyone has their part.
Jedi is for those willing to work above and beyond to get it. Ideally the way to unlock it would be so hard only 50 or so jedi would be on the server. During this part of the SW timeline there were very few jedi and they were in hiding, so they shouldn't be the dominating class of the game. And yes, jedi may be the best overall class, there are classes out there that can beat them if they play smart. Hell, Bounty Hunter is a profession that make their living hunting jedi. There's my rant.
tl;dr: Don't fret if jedi is hard, enjoy the tons of other aspects of the game.
Back when I played Pre-CU me and my friends made contacts with a Jedi, we met him in this secluded bar and ambushed him.
We all died, even though I was a skilled bounty hunter. Gave him a run for his money though.
A single Bounty-Hunter cannot drop a Jedi alone (At least a jedi who doesn't suck ass), that's why Bounty Hunter teams in Pre-CU were prevalent. They usually had a few skirmishing bounty-hunter carbineers backed up by maybe 5 riflemen.
The only disks I have are the Total Experience ones, they still work though right?

Just get the Emu's Launchpad Enhanced, run it, and you're good.

What I meant when I said I was getting jipped I dont mean that getting jedi wasn't fun for me or anything like that, What I meant was the randomness of it, y'know? I've seen people who have mastered close to every combat profession and are stuck at barely, and i've also seen people who have gotten no masteries whatsoever and gotten jedi.
I've honestly stopped trying to go for jedi tbh, mostly because it wasn't fun for me. Instead, I have decided to go bounty hunter. With the jedi population as it currently is, there should be plenty of business :)

Eh, a good BH can drop a jedi if he's smart and has the right setup. Same goes for a TK/Defense stacker.

I'm pretty sure that site is an up to date database for the server, so everything that spawns should be on there, but I haven't played for a month or two so I could be wrong.

That's why I said good jedi, a smart/good jedi would know when he's outgunned and run his ass out of there before it's too late. (And don't tell me they can't, one of the jedi I know can keep himself alive with Avoid Incap on one health for 7 minutes straight)
