How are you grinding Doc Crafting? I get ridiculously bored with it, not to mention it sucks with my crappy materials.

I try to do a mission on Tatooine and the goddamn target (an eopie shelter or whatever the fuck) can heal itself faster than I can do damage
Plus I'm so goddamn weak I got knocked over by a dune lizard which comes up to about my ankle and I can't get up.
What do? I'm a novice marksman and I can't even pay for goddamn Pistol I training (860 something credits, I need 1000). Or a vehicle.

Game seems like a grindfest, not really any quests that I can see. I've never played pre-cu mind you.

If it gets healed there is a creature healing it. Try and take out that first. And try to team up with someone. The quest is shared between you and it becomes a hell lot easier.

It is, but it's pretty quick... You can go out and master Teras Kasi, Swordsman, Rifleman, etc In just a day or two days of grinding, The crafting professions take a bit longer, It took me about 4 days to master Armorsmith pre-CU, and I sat in the corner of Theed's Cantina crafting 28,000 Armored Upgrade Units to do it
But like I said, Not as grindy as current SWG, or Any other MMO out there... except maybe Guild Wars, Hell even GW takes longer to hit level 20 than it does to master a Combat Profession
What should I do first? I created a brawler on Coronet City. I'm just doing quests to kill shelters and I've upgraded my skill once from my trainer. Anything else I should know?

Ask other players. Paying thousands of credits for skills when you can get other players to train them to you is going to run you out of money as a new player. They get teaching XP, you get skills, most people will gladly do it.
Weeeeee, SWGEmu seems to have come a long way since I last checked. And I need something to replace Red Dead Redemption.

What does that xx3x shit mean? I assume its like 3 points in the 3rd branch for that skill?
