Catching a kidney as it's ejected from the patients body cavity after hitting a speed bump makes me feel like the worlds best worst surgeon.

Not neccesarily the tools you have to use, but the tools that are specifically made for those assignments. I THINK (not sure) that they also might have less chance of causing bleeding when severing their specific organs than the other tools (because I read a developer comment that at least in the free version the scalpel that was specifically designed for heart surgery intentionally did no damage).

I did however find ambulance kidney surgery to be significantly easier than regular kidney surgery

Gah, is there a better way to grab kidneys? I can never get them out no matter how hard I try and I'm trying to do the speed run.
