Arma 2. It's a Military Simulator so you can expect that to be stealthy takes some planning, using the terrain to your advantage, and patience
Arma 2's stealth is amazing against other players.
You could have a guy in a ghillie suit 3 feet in front of you and you wouldn't even notice.
Already been stated but "The Chronicles of Riddick" games are seriously underrated and you should give it a try
I guess you could include the stealth missions in Men of War. They're similar to Commandos.
Plus, you can do all the stealth shit in multilayer. Its always exciting direct controlling a scout, crawling behind enemy lines, then planting dynamite on their mortars/tank/artillery.
