L4d, I count tanks as bossfights, you know whenever your playing online and a tank comes everybody scatters and yells tank.
Borderlands has some good bossfights if I recall correctly.
The best ones by far are FF series.

Definitely agree with you there. You'd hear that music start up and you knew you were in for a fight...at least on the older ones, haven't really played the newer ones.
bayonetta bosses were fun for a while, but then they just got fucking annoying
demons souls
The resident evil series has some cool boss battles but they were too easy in Resident Evil 5(wesker is a fucking badass)
Mass Effect 2: Lair of the Shadowbroker had 2 really cool boss battles. ME2 is filled with mini boss battles
The Vanquish boss fights are badass.
Dead space had good boss fights.
God of War series were mentioned and just when I want to say Dead Space post above me has it.
Oh wait, Half-Life.
Kingdom Hearts and Onimusha had some challenging bosses
Monster Hunter.
Any of them, they all pwn hard.

Which one?
When I got stuck on bosses I either rethought my strategy and changed my skills, or grinded(?) on free battles.
Depending on which route you pick the last couple bosses can be a pain in the ass.

In a more serious tone, shadow of the colossus, god of war series and painkiller have the most incredible bosses ever. Dante's inferno too, but not as much as GoW.
Dead Space had some brilliant boss fights. Take that space rectum!
