Cockpit most of the time although for Burnout I use the bumperview (mainly because Burnout hasn't got a Cockpit View)
Bumperview simply because I'm too shit for cockpit and chasecam seems even harder
Third person, that's what i'm used to.
Third person, in all of them. It's easier because you can see the position of all four wheels in relation to the track.
Whatever is far from the car. Generally the widest view from the back.
Cockpit.
But I don't actaully use it that much since many games that I play either have bad ones or thirdperson gives a huge advantage.

In GTA4 and Burnout I prefer the third person view because I can see what's going on with those crazy-ass AI.
As for other racing games... I don't play other racing games.
I love cockpit view because it's harder, but I simply don't use it because you are not forced to, so other players will go for 3rd person and gain the advantage.
Third person, unless there's TrackIR support, and it's well implemented.
It's easy to hit the apex of the corner in third person compared to cockpit when the view is fixed straight ahead.

Actually most new racing games for the PC support it. Dirt 2, Grid, F1 2010, rFactor, RACE, etc.
If only Trackmania had a TrackIR cockpit view.

Usually thirdperson because I can't get a feel for what's going on from the cockpit.
I prefer the cockpit view for the immersion bonus (or hood view if cockpit isn't available), and I also find that it's easier to drive precisely when I can see exactly where the front of the vehicle is pointing.
I have to go bumper. Cockpit/dashboard just doesn't feel right with the lack of sensory output and the lack of ability to turn your head as if you were actually driving. And 3rd person view always results in me over correcting in turns or when I spin out.
