I wouldn't call Fallout 3's story immersive, but the game it self was immersive.

I'd highly recommend Star Control 2 (Also know as: The Ur-Quan Masters), which is freeware now. You fly around the galaxy, make allies with many interesting alien races, fight with hostile (yet still interesting) races, gather minerals, and upgrade your flagship and starfleet . Despite the fact that the game was first released in 1992, the game is HUGE, to the point that it would likely take hundreds of hours to explore every solar system. Hell, if you don't write stuff down, you'll probably forget where you were supposed to go next. I should warn you, though, that the game is pretty damn hard. The combat system will take a little getting used to, but it's fun once you've learned how to use the ships. If you don't beat the game within a few in-game years (I'd say somewhere around 25+ hours of actual gameplay), you will actually fail your mission, and the game will be become unbeatable.
Overall, I consider it one of the most underrated games of all time. I guess it isn't a straight-up RPG, but there is progression in it for sure. And yes, the story is definitely a good one Lots of interest lore to discover and alien races to talk to. Hell, if you can find a PDF file of the game's original manual, there's a whopping 18 pages of backstory in it.
