No I am pretty sure there was a mod or bukkit plugin that let you change nameplates, They also had a "Notch" "NPC" in their vids. It would cost a fortune for all those characters and I doubt the name "Fumblemore" or "Israphel" haven't been taken already.
Oh and more to Add All the NPCs have names like <title>_<name> which makes me positive it was all done with a mod or plugin.

Hrmm, I'm looking for a video, I found it a while back, I think BlueXephos had it favourited or something, but i can't see their favourited playlist...It was basically an overview of the series, but from Israphel's point of view....I think it started with someone going "You entered my domain"..

Ok, when they were in Mistrel city, they uncovered a door under Israphel's grave, but didn't go inside it, they just sealed it back up. I assumed that it would become important later and that they would go back to it, but there is no hint of them returning to that grave site. What's under the grave?! It's bugging the crap out of me!

What was the episodes where I think they were in a town with the surrounding environment being green/temeperate and the two guys wind up ontop of a floating island with trees above the town or something like that. I think there was also an archery range in the town they shot at.
I also have a faint memory of some npc that was "immovable" or a blacksmith or something, not positive though.

Mistral City?
Sounds a lot like Mistral City if you ask me. But the archery part sounds like the Carnival outside Verigan's Hold.
Maybe the archery was in a different video then. I saw the archery range while looking through the videos but they didn't actually go to it. The video I saw they did.
