I'm working on a concept for a four-chambered trading booth.

It'd look something like this.
The blue levers are for locking the dark blue doors somehow so people don't come in and ruin everything. The dark gray doors open when both red levers are on, and the light gray ones open when otherwise.
Player one enters top left chamber, player two enters bottom right. doors are locked. Each player drops their offer in the horizontally adjacent chamber from them, and when an agreement is made, both players flip the red switch. the light gray doors close, and the dark gray doors open, allowing the players to grab their loots.
I was trying to reproduce this in game, but I'm not the best at wiring.
I don't understand the stress on trading rooms. Unless trading isn't implemented they have no point at all. Even then you can just have an intermediary watch the transaction.
Also, if the storekeep is robbing people then I'm fairly sure they'll be out of business soon.

each persons control closes there access to the room and opens the others, when both are sisfied they press switches and go, if one person doesnt press you can press your switch again to stop him in his tracks.

Both put in what they want, both have to press a button, and only after that you can get your items traded.

well there could be an escape hatch in the rooms with the stuff inside, say just a drop down by 6 blocks with water at the bottom

this is looking at it from side on, the drop is so noone can get in bit people can get out.

also as far as i can make out from what you're saying, the doors to get out of the building are controlled by switches next t the doors, the individual rooms are controlled by each person.
But that defeats the purpose of having locks. Then when one guy has got what he wants, instead of paying for it, he just flees out the convenient little escape chute.

you don't have to open the door to let him in the room, the idea i had was that each person has a switch controlling both doors to the room to the left of them when the switch is one way, you can get in and put stuff in, when turned the other way, your trader can get in and get the stuff, the same goes for his room, both people must watch each other putting the items in the rooms then after they are both satisfied at the same time open the doors to let the other person into your room, i suggest having a long corridor to get through so when the person starts running and hasnt opened his room yet, you can close yours before he gets there

I finished wiring my trading booth, I just put an And Gate deep in a hole, and then branched it to connect to each door. a lot simpler than I expected, really. The way I have it, you can't get in the room with the other person's items until both players hit the switch. After both switches have been pulled, you lose access to the door with your stuff and gain access to the door with the other person's stuff.
Getting stuck in the booth also won't be a problem because There is at all times an open door leading to a room with an exit.

With the sewers, I think that the lava burning it will ruin the fun of scavengening.
You could make it harder for scavengers by saying scavenging is a civil offence and they are sentenced to death via arrow to the head or something.

I don't think there should be a consequence for scavenging, it's just a bunch of junk that nobody wants anyway. That's why they flushed it down the toilet.

If you hit the wrong lever it opens your door, not the opponent's.
