I'd assume it's due to efficiency. Aerodynamics don't mean shit in space, but most of their drop ships are designed to be used on habitable planets, where it does apply. Probably requires the least amount of energy exerted on average, due to all the variable environments they are used on.

Indeed, but that's not to say she won't look fine with a bit of hair too.

Apparently she's calmed down a bit, fair enough too. It's a lot of effort to be who she was and can't keep it up forever. Transition into someone like Zaeed or Matriarch Aethyta, tough as nails but not so aggressive about it.
