You are wrong in so many ways.
I think they should appear only on special nights where the sky is purple or something and the moon is bleeding. Combat with them should be unique and not just hitting them a bunch of times kills them. Like, you can only kill them with fire or explosions or lava or something.
They should be able to teleport around randomly and go through doors.
When you get too close the screen should go all weird like when you go through a nether portal and if you touch them, they should teleport you into the nether.
Or at least, that's what I'd like. I don't know how fun they'd be to fight if they were like that.
Whatever happens, I'd love them to be rare so they don't get boring and repetitive and I wouldn't like to have to fight them alongside other mobs. Something as freaky looking as that should be treated like a boss fight.
Being immune to endermen by wearing pumpkins is a stupid idea. You don't make some terrifying monster and then make a way to completely destroy it at the same time.
In order to not break gameplay, maybe they can only pick up blocks that have not been touched yet. They would not be able to pick up pieces of your mob traps, house, etc. if this were true.
I sort of want them to be able to build things on their own, though. It would give them a sort of appeal opposite to what the Creeper's appeal is. Instead of destroy stuff, it builds stuff. Creepers and Endermen; both are love-able.

I'd like it if they built statues shaped like Steve, five blocks high. If they built those out of dirt around the door to your house, that'd be a pretty serious mindfuck.

Or if player doesn't have anything of above, check his average position during the day, and if he's not travelling too far, means he's busy building something, voila!
But I still think that endermen won't try to hunt you down by default. More likely you will stumble upon their nest, hive or whatever while travelling.

Find the player's current spawn-point, and make them build about >50 blocks away from it.

they should try to stay away from each other IMO
Make them find the players spawn point, then find the first place where it is in direct sunlight with enough room for them to build things, and add a couple meters to it.
I saw a video of a fanmade Enderman, and im playing 1.8 on peaceful until i get to a pig village XD.

They run at you at high speeds, leave a trail of fire and lava and when you kill them they explode.

I sure hope it's a joke, because I think the Endermen are just perfectly fine just picking up blocks and freezing up when your looking at them.
