Well, you get the point. I've seen some videos online with guys shooting at an immense rate. Mostly with the Mosin Nagant.

I think it's silly to say reloading or the bolt pull is too fast. For one the cycling of a bolt can be extremely fast, Call of Duty makes it look slow TBH, while the same goes for reloading. I do think, though, that there should definitely be a randomization to it, as in combat conditions as harsh as Stalingrad, as cold as Stalingrad, one isn't going to be doing it at full speed consistently and there's definitely more to go wrong with a gun than a misfeed. Well they're at a range, not even holding the rifle properly. I'd imagine you'd have a slightly harder time while getting shot at and keeping your aim deadly enough.

Try it for yourself, especially at the ranges this game will take place at. That's almost irrelevant even, because the bolt pull is fast but you have to manually reset your aim in game, so it's modeled fairly realistically.
A trained british soldier was expected to be able to put 30 fairly accurate shots downrange in a minute, and many were capable of more than that. That includes the time it takes to reload btw. That's 1 shot every 2 seconds as a MINIMUM. Seriously, count it, 2 seconds is damn fast. The bolt pull on the Mosin and Kar98 were almost as good as the Lee Enfield, so it's really not that much of a stretch to expect similar performance. The only benefit would have been the larger magazine but whatever, that's not what we're talking about, we're talking about the bolt pull and I think it's just fine.
Reloading my dad's Mosin always use to be a bitch, the rounds rim always got caught on some part of the inside. Let alone, if you put a round in too far back in the magazine it jams up.

Lee Harvey Oswald was able to work the bolt on his Carcano pretty quickly. Apparently he worked it obsessively for over a year before the assassination.

It's not really applicable in a discussion between Russian rifles and German rifles. The Lee-Enfield has such an easy bolt I can work it with a pinky on a bad day.

Not really calling for PR's frustrating levels of "hyper-realism" but just keep this point in mind.

Explains why the Lee-Enfield was the only gun I could find in videos of speed-bolting or whatever the hell it's called. Could anyone else find a video of a Mosin-Nagant type rifle or Kar-98k? Ive fired a K98. Even though it was some Yugoslav rifle or something, that bolt was smooth as fuck. Mauser's have some of the smoothest bolt action.
Hmm, do they let you bolt your gun even if you haven't fired? Not sure Ive seen that in any videos. That was one of my favorite aspects on RnL mods's gunplay, was that if you only had like one or two rounds left, rather than shoot till you're empty, you could just work the bolt to remove the extra two rounds and then just reload in advance.
I think that these kinds of games dont show that getting a stripper clip into a rifle is a BITCH. Hard as hell. But once you pop that clip in there its smooth sailing.

Such as the G41 and the Enfield.
