This game is so fun. Is stealing cars a good way to make money? I had someone with a decent security skill, and I would steal SUV's and sell them for about 800. I got some good money from that quick, but the person got arrested from it as well.
How can I get someone to learn the security skill?

Go around the crackhouse and apartments and use them to pick the doors, even if they screw up it'll slowly increase their security.

The december 2010 update really makes it harder to make souped-up characters through endless grinding, a good thing I think
How do I train my guys really well? I kept them in training in first aid, driving and a bunch of other stuff like that, I got them armoured in mithril and ak-47's, but they still get killed so easily from a lot of the enemies. What are good people to train on?
Also, is mithril armour the best armour?

I checked the stats on them (dug through the XML files) and mithril is borderline worthless. Trust me, you'd be better offing a SWAT officer and stealing his armor.
