Um, a bad build is more wrong than using a cookie cutter build to the letter. AD Karthus for example.

Not exactly.
Cookie-cutter build is predictable. I might be running ahead in terms of level of play Sh33p will encouter for now, but competent enemy can read you and will read you. Yes, farmed Kata with gunbldes is dangerous Kata and nothing will change that, but then come things like priority list, focus, stuns,etc.
I can recall an example for this :
I played Trynda while enemy team had smart Twitch. Guy went for early At/mog, as majority of our team could blow him up in a second, including me.
I had trouble killing him as that tactic gave them upper hand, so I went like this :
- Twitch seems to continue stacking HP/defense items on top of atmog
- Rest of his team is underfarmed
- My team has WW with almost done Bloodrazor
If I go atmog as well I will recive almost no damage from Twitch, survive their stuns (they had couple of proper CCs) and with lifesteal I can stay in their jungle, heal up to full 3,5k (can't remember the exact HP) and go into teamfight from behind.
Twitch did as I thought and proceeded to deal no damage at all.
Also, I think you've never faced AD soraka..... if you notice it for the first time at 15 minutes it's slightly too late to make up for it in terms of fight plans.

It's better because in League, you can be 1100 with 100 games played and get paired with/against an 1100 who just got stomped down from 1200, with 3 games played, and is on his way down to 800.
It's also fucking retarded how EVERYONE starts out with 1200 elo so you can get matched with people from all sorts of playing levels and lose/gain 50 elo because you get paired with/against another one of Jiji's smurfs or something.

This team was so nice, no one bashed on each other, and me and morde bro'd it up, went double wotas, and healed for more damage than their whole team combined.
Also, I baited rumble into diving me twice where he flash towards me when I was 100 hp.

You'll find out from the abilities of the champions. If you get Dr. Mundo, that uses his health as a source of energy to cast abilities you'll realize that he needs items that give him health and health regen. If a champion's ability gets damage from his armor, then you'll have to buy armor, etc.
I say, start like I did: choose a champion that looks cool, search for a build for him (get the best rated ones) and start reading guides for him. After a while you'll start noticing how the game works, what is a tank, a support, a jungler or a carry, and how to counter each of them. Don't worry about your K/D ratio as you start playing, too, it doesn't matter much as long as you're a team player.
Vlad is so fun.

How do you get experience in the early game quickly? I tend to find that people are 4/5 levels above me movst of the time and I just get destroyed

Stay near the enemy creep wave when they die, and don't leave your lane.
I havent been playing this game long, only at level 7, but holy crap this game is fun
