Explore, join one or all of the guilds nd do their story lines., find dungeons, do the expansions if you have them, do side quests, do all the deadric shrine quests etc..,

Honestly, people that don't enjoy RPGs should just play through the main quest at level 2 if they want to play the game but not truly experience it.
Basically it's what you get with Call of Duty (not saying that's bad), but if you don't level up you can play the game in a linear fashion as you can with FPS games.
Although, in my personal opinion that is the single most stupid thing you could ever do with a game that has as much potential as games in the TES series do, it'd work for the people that bought the game without realizing what it was meant to be.
EDIT: And I'm not saying you're one of those people. I sort of wanted to beat the main quest and then play the rest of the game once it was over with.
First playthrough: Nord with sword and shield, maybe heavy armor even though I hate it.
Second: Magical Argonian assassin
Third: Mundane Dark Elf assassin.

I usually try to stop myself from going "loot everything"
I notice I tend to enjoy a game less if I horde, especially since realistically it doesn't make any sense. To me, its the same thing as grinding, except instead of fighting for XP its collecting. But I'll still check corpses for any items most of the time, unless they are really generic baddies that I know won't ever have anything special on them

Anyway, Skyrim has it's own little section in the dashboard, like you click the panel and it has a nice little menu thing, the only other game I've seen do this is Halo Reach, so it must be quite a big thing to microsft.

Human nature man, if there was no penalty for doing it most people would pick up absolutely everything. The problem with TES is that the penalty for hoarding is much too small, your ability to function should decline based on how heavy your equipped items are and how heavy your carried items are, works for most other games, namely Demon's Souls (although carry weight doesn't have much of an effect on you or at all I don't think but you are very limited in what you can carry).
But yeah I agree with that, I don't hoard items unless they look important, I don't hoard items so that I can sell them at a merchant for infinite money, I try not to use obvious exploits that would allow me to break the economy the developers have put in place. But I wish they'd try to fix these problems rather than rely on player cooperation.
God, another fucking half-hour long intro sequence that's going to make replays a chore unless you get a mod that skips it all.
And the voice acting is still awful and the animations don't look much better than Oblivion's.
But, most of the environments that were show were, indeed, pretty.
I liked the stream and waterfall in the cave the most... with the water splashing against the rocks and such.
And atleast the combat looks a little better now apart from the insta-kill super-cool execution move.

Attack, really weak NPC that has the best sword in the game, trust me you want that sword and it's a very easy fight one hit kill.

Make a save right before the exit with all the gear you find in that area.
Hit it with my electricity spells.
My body is missing vital organs.
Those videos being taken down really made it easy to keep everything a surprise

What about creating different characters?... unless they keep that screen that has you double check the stats and everything.
Oh yeah, yet another stupid way to create your character.
The guards/executioners don't ask who any of the other prisoners are and yet when they get to you it's like "WAIT, WHO ARE YOU?" and then you get to select your race and everything.
I wish they'd just put character creation after you click new game, it would remove that element of silliness atleast.

I thought it was right after you started a new game, but you can always go back and edit as much as you want right before exiting the "tutorial zone"

that wouldn't really change anything. they ask who you are and you respond with the character creation. They knew who the other prisoners were since they had them on a list
