I think fish would be good, it gives another reason to go fishing.
In general I'd like just a simple fish mob, maybe it varies from biome to biome but still simple. Unlike other mobs it simply runs away from you no matter what you're doing, and they're attracted to the fishing pole bob. In jungles they are a lot harder to catch and a lot faster, but are a better food source, and in desert oasis's they're even better because they're rare.

Coi in jungles, catfish in swamps and rivers, and blue salmon (with stripes) on the open ocean. Also you can reapply the fish into water you create yourself, so you can have coi ponds.
Keep your Jungle Cats away from the pond or bad things will happen.

Funny. Notch leaves and great shit is cranked out every week.
Personally I don't think it was just Notch's absence that caused the growth spurt; when jon came along he started sorting out the AI and that's one of the important factors. Jeb taking the reins of the project was also a plus.
I found a map on youtube i think, where something with the generation of
the world had gone wrong. It had spawned a massive village, stretching some
300 blocks.
And that gave me an idea. I downloaded the map in the description and headed over to
google to find one of my favorite texture packs, Last days.
For those who dont know, last days puts you in a post-apocalyptic world where you have
to scavange for food and materials.
The map, combined with the pack gave a pretty amazing experience.
The houses had overlapped eachother, creating all sorts of strange shacks and
shelters.
Here are some pictures of my explorations:
A pile of houses. Underneath all of this there were the left overs of other houses.

When night fell over the rooftops i hid inside a library, where a ladder led down into the darkness.
I climbed down and what i found was a network of doors leading here and there and ladder leading up and down the caved-in rooms.

Its amazing what minecraft has to offer with a simple texture pack change and some glitches.
