You can hide detailed engravings via the designations menu, or you can set them as hidden by default in init.txt
I really want to get into this game but I can't bring myself over the learning curve. I don't want to watch 40 video tutorials and the other tutorial links in the OP are dead.

It's best you get someone to teach you on Steam or another chat program, that's how I taught people.
I want to play Dwarf Fortress.
I don't want to watch 30+ tutorials on YouTube.
I don't want to spend more time on the wiki than actually playing the game.

A goblin siege of around 15 heavily armored goblins arrived unexpectedly when I had literally no military. My almost entirely 'estatically happy' fortress of 84 dwarfs that I've been working on for almost a week was nearly decimated, they ended up retreating their last 4 goblins after they slaughtered over 70 of my untrained dwarves. There's only 4 adult dwarves, and 3 children left. [IMG]http://i.imgur.com/zplD6.gif[/IMG]
[b]edit:[/b] They retreat when nothing happens anymore (everyone just stands there while 'kill goblins' is on the task list), right? I still see the siege text at the top.

Ah yes, my adventurer has killed over two hundred bandits, monsters and megabeasts. He has earned the title "Boltedborn the Insightful Dearth of Mothers". Now... I'm curious what sort of backstory this could have come from.
Also my loyal companion, "Badu Sensedurges the Quest of Sacrifice", an herbalist. He's killed three ogres and four elves with his trusty bronze carving knife.
I'm playing as humans in fortress mode, and my military screen is empty? I can't seem to assign my bowman to a squad, as there are none. I'm not quite settled into the new military system, am i missing something or are humans bugged?
Also, i'm playing in a savage jungle, making an above-ground fort. This might cause much hillarity, i'll post any stories that might emerge from this project.

Humans don't have nobility or military commanders, so that's why. Lemme get up the fix I made a while ago.
[url]http://filesmelt.com/dl/entity_default1.txt[/url] There we go, gives Humans a functioning noble screen and military while giving you a bunch of other delicious additions (ability to use coal and make steel/Adamantine, masks are uncommon rather then rare, traps.) If you don't like the idea of Humans using those things, I can give another file that simply gives Humans nobility/military.
Also, the wiki is your friend. I still have it open when I play to this day. It's information is invaluable.

How do you play as humans in fortress mode? I'm assuming a mod? Is there a bonus for outdoor fortresses?

You give the CIV_CONTROLLABLE tag present for Dwarves to Humans, and the INDIV_CONTROLLABLE tag to Humans to Dwarves. Toady made it possible to play as Humans, Elves, Dwarves and Goblins without having to resort to mods or anything like that.
The .txt file I posted below what you quoted allows you to play as Humans as naturally as if they were the focus of the game; Caravans arrive in Summer, Human immigrant waves arrive, you can get barons and dukes and kings, etc.

I can get to the point where I have a wood stockpile and a carpenter's workshop along with a dormitory, dining room/meeting hall, and a masonry. I don't know where to go from here. I make a farm with plump helmet spawn but I feel like I'm doing something wrong. How should my stockpiles be set up at this point? Should I have a stockpile exclusively for seeds near the farm? Where should my food stockpile be? How do I set up stockpiles for an efficient brewery?

food stockpile near dining area, give your dwarves all their own bedrooms for happier thoughts (each with a chest and cabinet), learn more about making a military, continue expanding and growing.

Make sure you get the Lazy Newb Pack. Make a Still nearby the dining room, and make sure you have plenty of empty barrels to store the booze in.

Yeah, you can use stone pots to store food and liquid now. Total easy mode, am I right, fellas? Back in my day... y'all had to go to the surface occasionally! Or at least let some dirty elves in to your fortress... Now them dwarves just live on rocks. Rocks!
What's more dorfy; storing your precious booze in boring old surface trees or storing booze in more fucking rocks?

But once you have done that once, (I went down the tutorial route from a website that provided a save and guided you through the basics) you get the hang of it really nicely.
My herbalist friend and I just got ambushed in our sleep by a band of goblins and elves. I woke up after one of them stabbed me in the guts and was puking all over. First thing I saw was my herbalist companion stab an elf spearman in the hand with his carving knife, making him lose hold of his weapon. Then he just kept stabbing him about 20 times until he bled to death. My sword arm was stabbed, so I went all Captain Human and smashed the goblin who did it through the brain. I couldn't get a good hit on the last elf, who was beating on me with a sword, but my pal came up from behind and fatally stabbed him in the back of the head. So... then we looted the corpses and went further away from the Dark Fortress site where these evil jerks seem to congregate. (Despite there not being an [I]actual [/I]fortress there.
On a partially related note, why the heck do you need to sleep for 72 hours straight just to not feel "very drowsy" any more?
