Mount and blade. Its not a fantasy when Vanilla, but you can get loads of mods for it.

Dark Messiah has great combat too, but that's 1st person.
I already have both Dark Messiah and Mount & Blade, and I don't like thw Witcher tbh, I prefer hack & slash

Witcher 1 and Witcher 2 have totally different combat. Witcher 2 combat is more hack & slashish, although you still have to play it pretty tactically since you can die really fast if you get surrounded.
But what do you mean more hack & slash, it doesn't have the 'click attack move' and your characters starts attacking a unit? Cause I mean Demon's Souls, Fable, Gothic kinda hack & slash.

If there's one game I would compare Witcher 2 combat to, it would be Demon's Souls. The combat really has some weight to it and you can get killed really fast if you're not careful.
And no, it doesn't have autoattack or anything like Witcher 1, you click and he hits to whatever direction you're facing. There are rolls, blocks etc.

Edit: Basically a martial arts RPG where you learn different styles, it kinda mixes beat em up and its manual blocking, attacking and powerattacks with mixing different styles and companion tactics.
Edit2: Plus, it's in an ancient China esque setting which isn't seen often in vidyagames.

I'm not sure if that really fits. Maybe something with like the car being "the joke" and the barricade being "your head" might work, or maybe the car being "you" and the barricade saying "get out".
Why not take the easy way and just put GET OUT in big red letters on the second barricade.
Edit: And maybe make the first barricade a shattering frog head.
