Certainly. Assuming the game can run over 60fps. Games like RAGE are locked to 60fps, so you don't get the benefit. 120hz is just a monitor that can display 120 unique frames every second. If you're running 120hz and the game is running at 120fps you're already getting all the benefits. There is nothing special you need to do.
Just make sure the monitor refresh rate is 120.

Except the 6990 only has 2GB per GPU. Unless he's running in scissor mode or Tiling mode for Crossfire the RAM simply runs in synch mode together, not adding up to 4GB. The 3GB 580 is the highest card to have 3GB per processor that I know of.

I know you are. But normally the drivers and software should read the VRAM per GPU, not total. The only time they are combined are with the older rendering methods like Tiling or Scissor, which share the workload per frame and as such one card holds half the of the resources per frame, same with scissor.
But with AFR or Alternate frame rendering which is now the defacto method as it's the most reliable and easiest to code for, each card renders the entire frame, back and forth, forever (hehe), and because of that each card holds all the required resources as if it were alone. As such 2048mb of usable ram is shown.
I'm saying it's a bug in the game that it's showing that much.
Or maybe GTA4 doesn't render that way? It is a bad port.
