DiRT 3 has amazing keyboard controls.

Turn off all assists, if you haven't already; best way to learn to be honest. You'll find you'll want to slide into corners than turn so keep it fluid. Take corners early to avoid going off and keep it steady on the straights.
In fact, take up "Time Trial". Repeat certain stages over and over again. It did wonders for me, as most tracks have the same few corners repeated throughout.
