In the beginning of SA, you were able to travel through Los Santos and Red County. Los Santos might not stop at water, but Red County does. You couldn't enter Flint County until later in the game, which by that point San Fierro was also unlocked. Each city also had a surrounding rural area that came with it as it got unlocked, that also acted as a border that could be defined by rivers and shit.
If locations are roughly the same, It would be hard to include Mt. Chiliad without including San Fierro

How you guys are talking about the possibility to add LS and SF in a DLC. That'd be awesome if they do that, and stitch it together in the original loading. I'd gladly deal with longer loading screens if it adds that much.

My guess is it'll just be the countryside above Los Santos, and everything past the water wont be included. No mount Chiliad but there could still be a big ass mountain elsewhere in the countryside

Guys, you're forgetting that this will be a whole new map. Its layout probably won't even remotely remind of the SA map.
I was thinking a little bit and I don't know if I'm late since I'm ten pages away from the most recent page as of this time.
With bikes, it could probably be something like the horses in RDR. Since they already have the tech for an exhaustion based vehicle, they could probably build it on the same platform with some modifications but work nearly the same gameplay wise. Except using rifles and shit on a bike. They couldn't do that

you might be able to raise/lower the roofs on convertibles, in the beginning you see the red car and you can see he's just finished lowering the roof, then later in the car chase scene you see the same car with the same person and the roof is raised
