Its a game, man. It happens for the same reason they fly as slow as they do, can take off on <50m runways and have the maneuverability of fighters. It is a game. The reasons you wouldn't see that kind of thing happen in real life depend on a scenario which Battlefield doesn't aim to provide, mainly in scale - this is because the game is intended to be just that, a game, and not a simulator of any kind.

Joystick, always helps in dogfights. That round I got 20/1 because all the other pilots obviously used keyboard and mouse (and to maintain a turn rate good enough they have to keep moving, lifting and slamming their mice - those who can maintain 300ish and pull 9G constantly I can usually take down with endurance :P).

These kinds of people are the only I ever see in jets, generally I see one -> approach -> he might notice me -> we circle at 300 for 5-10 minutes until he either breaks from moving mouse too much or messes up throttle control -> I get a kill opportunity and take it, as per video.
Of course at one point there was this pilot who obviously couldn't figure out how to throttle... At all? You see me kill him twice in that, when he's just floating on the spot.
