What on earth are you talking about? There are so many M-rated games out there that are full to bursting with violence, gore, and sexual content that it's flat-out remarkable. And you know who's playing these games? Adults AND teenagers.
There are so many 7-13 year olds buying M-rated games (with their parents, obviously) at our local Gamestop...it's crazy. I've had to sell Grand Theft Auto 4 and Red Dead Redemption to 5 year olds because their parents demanded it. Developers of M-rated games don't give a FUCK about "shocking" 12 year olds.

What does it matter? If the game is overall good, the amount of gore is the last thing in my mind.

Let's see...Serious Sam (any), Dead Space, Dead Island, Dead Rising, Skyrim, Fallout 3 & New Vegas, Mortal Kombat, and the Gears of War series are doing pretty decent. And I remember Brothers in Arms: Hell's Highway having some great gore.
That said, many games flat-out don't feel the need to have body parts being torn apart and I can understand that. Halo and Call of Duty wouldn't necessarily be better if people's heads exploded with each sniper round, even if it might be more realistic.
