What changed was the popularity of 2v1 lanes. I don't play Darius, and I hardly ever top lane, but how does he do in a 2v1 situation? Maybe that's why he isn't seen much in comp, and anything not seen in comp isn't seen in soloqueue much.

People very rarely laneswap in SoloQ tho.
The only problem with Darius is the people who think he is full stomp vs anyone, as they seem to do with Garen.

I just played bots for the first time in years because a friend who's new wanted me to play with him while he tried out champions. I actually get bursted down by lone bots now and it kinda weirds me out because I never expect it.

the thing about bots is that they snowball much faster and somehow gain items that they couldn't afford
Plus anytime you walk in range, they'll use ranged abilities that can get you
Bot lane against Blitzcrank bot is hell.
also they will casually leave their lanes and walk to exactly where you are if you ever enter their jungle

When the first tower goes down, all of them will gank that lane. All 5 of them.
i'm either getting worse at this game or my lack of champions is beginning to have an effect as i go up divisions and get more variety in team comps

I think you underestimate the devastation of having full control of the top portion of the map, being able to splitpush forever, and be a constant nuisance to the enemy team. And don't let that fucker get ahead, because he will just fuck you up and down.
