I heard them say a while back they couldn't do shadow of collosus size bosses because the engine couldn't support maps that tall, but some of the new void areas are literally hundreds of meters in height. Are those bosses literally kilometers in height or something?

Kinda. Most of that game's gameplay [I]is[/I] the colossi. There's not much to do other than fight them. It's pretty epic tho, at least from what I've heard.

The game is more of an experience (or art) than a game, in all honesty. And yeah, that's all there is to the game, and the bosses are like as tall as the empire state building sometimes.

It's basically an online RPG. If you played an RPG for 3 hours expecting to progress significantly then this might not be the right genre for you. I suggest you play flash games or arena shooters.
