I wouldn't underestimate the devistating effects on a person substance abuse inevitably has, even something as "safe" as alcohol.
He figured out sneaking through Labyrinths is way more fun than guarding them.

Living in a labyrinth, you get bored. This particular minotaur was interested in mechanical things - particularly, the challenge represented by locks and lockpicking.
Then, one day, the treasure he was guarding (as minotaurs are always guarding stuff) was stolen (because adventurers are always stealing shit). Rather than live the rest of his life disgraced and ostracized from minotaur culture, he decided to simply go steal it back.
And so he did. The plan worked fine. Brought the treasure back in one piece, the thieves got eaten.
But he had a taste of adventure, and could no longer stand to be a mere labyrinth guard. And so he became a rogue, adventuring for the sake of adventure.
