Is it possible to play this, AND enjoy it, without having any special interest in general european history?
Some Paradox games are probably better than others in that regard, but it's not like they are complete historical simulators or anything. Crusader Kings II is without a doubt the easiest to get into for anyone who might not necessarily care about European history just because the whole dynasty system is pretty engaging on its own. Not to mention there is all sorts of way you can break the world, like conquering all of Europe in 25 years as the Turkish Norse Atabeg of Nantes. Europa Universal IV is the same way, although it's a little more abstract since you're dealing with states rather than people.

So the CK2 update added 2 more countries to the EU4 conversion tables, The Knights Templar and obviously Israel. But it also added unique Ideas for Jerusalem if you convert it. Jerusalem in default EU4 is just a formidable nation, with basic ideas IIRC. I like asking for money from the Pope. Playing as Jerusalem and you can just ask for 1000 denars from each pope if you do holy wars occasionally.
I just tyranically imprisoned every king and some jarls in my realm. My realm is p much scandinavia and great britain and a bit of northern europe. Now every vassal is understandably in an uproar. Now, if i instate new kings, do those vassals become their problem or will i be fecked either way?

Because of the papal gifting thing now, it makes it so Jerusalem can be a fucking tank if you play it right and cause it to build lots of cities for taxes.
As long as that means they don't get instantly stomped by a pan-Islamic alliance that's great! Also, how often do the Hashashin actually last until their historic time (~1250) for everybody else? They usually always get crushed within 5 years of their existence on my end.

Starting as a lowly patrician of the Hanse (A Jewish one at that), I worked my way up inside the Holy Roman Empire. I built a vast empire of fully upgraded trading posts, siphoned money, built cities (That I controlled directly) inside my single province demesne, and built a huge retinue. It was too late for the Emperor, who realized what I was doing and declared war on me. I used vast mercenary armies to take apart his empire and I began to work towards the destruction of his great Empire. As for the Emperor? He was "Culturally enriched".
I'm thinking of getting the new DLC, at the same time I'm trying to look for a country to play as. I originally was hoping to restore a Hellenistic Greek in CK+, but the newest update screwed that up, shame I would've transferred and expanded the empire to India. I might actually just play the French, I almost never play them or the Saxons.
I'm disappointed with SoA's Islamic additions, differentiating adherents between Ash'ari and Mu'talizi is a step in the right direction but I think it would have been better if they added the jurisprudence schools instead since they essentially solidified within the standard CKII period and had a more definite relation to authority. The best case for the importance of adding Ash'ari/Mu'tazili is the Mihna during the Abbasid period but that directly fed into Ibn Hanbal and the development of his school of jurisprudence. They seem to be the forgotten religion in this case although they promised they'd look into stuff like changing decadence for the January update.
I love playing a republic and slowly making money, then going on a crusade. Going to wait for sale to get some DLC's though, haven't played CKII that much.
In my game of EU4 Ukraine got independence from Lithuania and now they're a giant blob in the middle of Europe after eating up most of Poland and the Teutonic Order. The good news, however, is that kebab was successfully removed from the premises. The Ottomans were driven completely out of Europe by a combination of a war with Serbia and a Bulgarian uprising. Then there's me, playing as Bohemia, being the only thing stopping the Ukrainian hordes from steamrolling all of Europe while also attempting to colonize the New World.

It's awesome how fucking great you can be if you focus on getting money from the pope because of your piety, and building client republics and cities all around.
