You expanded far too quickly and put too much power into the hands of individual relatives. You can't even trust your close family with much in CkII. For stability I recommend creating as few kingdoms as possible and going as far as even disbanding a kingdom once the Empire title has been formed. This should insure that gavelkind never destroys anything and that your characters line always has control. Gavelkind should only ruin your demense but that isn't very much to care about. As a norse power you should have vast stockpiles of wealth to hire mercenaries. Raiding makes money easy.

I also managed to take over all of the Nordic Countries, along with Estonia and Lithunia as Latvia with some 'gamey' tactics prior, I never got around to fighting off the Russians before Germany steamrolled me after I (inadvertently) joined the Allies
I'm playing August Storm as Nationalist Spain, but for some reason my comsumer goods requirements are through the roof. Is there a reason for this, or a way I can fix this?

Is there a guide out there on how to edit HoI3 savegames?
Would any of you recommend the ICE mod for TFH? I finally decided to buy all of the expansions so i thought i should get the most out of it on my fresh play through.
When I am playing singleplayer I can't play without BLACK ICE or it just feels wrong, it's my Lebens Blut.

Anything specific you want to edit? Usually it's not too hard figuring out if you search a bit in the save file.

The easiest way to do this is either setting your construction practical to 100 or editing the provinces to include them, I'll explain both
For the Practical goto wherever your save games are, in my case, C:\Users\Sean\Documents\Paradox Interactive\Hearts of Iron III\save games
Open up the savegame with your text editor of choice (I use notepad++), hit ctrl-f and search for the string "Human=yes" it should come up with your country from there search for "construction_practical=" and edit it to what you want.
For industry in provinces its abit harder, hit ctrl-f and search for core="(country here)" the countrys are shortened to 3 letter words, Iran for example would be PER for whatever reason and the Indian Empire would be RAJ, find out what your country is called (if you dont know how to do this go ingame hit the ` key and type tdbg, this will enable debugging mode. Hover over a province and it should tell the country owners 3 letter name.
Once you've done this you should come to your provinces and you'll find it to look a little like this

I'm tempted to change the culture of Sicily to actually be Italian as opposed to a Serb-puppet state. The Germans have basically absorbed all the poor Marios out there.

What do you mean by like puppet state in CK2?
Since puppet states can't really exist in CK2 I just make kingdoms with someone who's of my culture and religion as the heads and possibly my dynasty.
Doesn't really matter though; the morons have already started falling apart.

Looks like my empire WILL have a rival in due time.
I always want to get back into CK 2 but I am absolutely terrible at it.
I can never seem to understand why certain things are happening and I am still not clear on how to accomplish certain goals. That, and there is a lot to focus on.
What do you guys recommend?
I would recommend watching someone else competent play first. The game becomes much easier to manage once you get a grasp on how to do things, and then it is just a matter of experience so you can get good.
