It's odd a couple of my favorite characters are Valentine and and Pucci.
Especially if you use the tactic of fuck about with your opponent while speaking the 14 words then use c-moons counter and immediately GHA.
Pisses them off a surprising amount.
I enjoy playing Mista but he's pretty hard to use.

The online mode is so terrible, I can't even perform a combo and have the screen with Iggy on it every second, every 2 seconds if I'm lucky.

No you're certainly not alone at all, the game is universally regarded as having a pretty shitty netcode, but as long as you have a wired connection and are playing on Dios Mansion as mentioned above you should be alright.

It's not entirely necessary, my PS3 is upstairs and I can manage most of the time wirelessly. The Dio stage does wonders, but yeah, a wired connection does help a lot if it's not too much of an inconvenience.
