Honestly, roll20 is probably even more fair than physical rolls. Even setting aside defects in the dice, some of the dice used in games are surprisingly hard to roll randomly, particularly D4s and D6s.
Just got done with my pathfinder session I'm gming. Highlights include:
-the party wasting 30 minutes punching a damn wall.
-Getting drunk with a God of Storms
-almost panty raiding the God's wife's Room
-BBEG getting hit by a God's Lighting bolt
All in all fun session.
Did they teach the wall a lesson?

I make all my NPCs dickheads to provoke players then tell the player's that they're evil for killing the poor innocent dickhead.

I used to start out trying to make my NPCs seem friendly and helpful, but they inevitably become condescending dickheads after a session or two of dealing with the PCs.
I still love how Rear's Lunar in the Exalted game I ran [I]waaaay[/I] back showed up and was like 'Yo I don't like you, I killed your previous incarnation because he was a massive dick, you better not be a dick or I'll snap you like a twig.' And then he just asked her if she wanted to help him build a yurt.

Also Vulture, the Sidereal they met in the first session who was supposed to be a gentle guiding hand getting them to do shit to help people/the gold faction agenda in small ways, but ended up having to straight-up tell them where to go half the time.
I remember when I told them someone might be currently trying to kill a governmental figure and they sat down to make plans for how to stop it by setting up as fucking guards and shit, then it just fell into "Oh my god, you idiots, I meant [I]right now[/I], currently, not 'later today' currently, go fucking save her before she dies."
All my npcs sound like smug assholes who are always hiding something, it's getting that bad that I do it without even thinking about it.
Most of my NPCs are chill to a point. Like if the PCs are fucking around too much, they get them to shut the fuck up and listen for a second.

I could not for the life of me say what my defining NPC trait is
Aside from maybe a consistent trend of powerful female characters but really thats just something I tend towards regardless of playing or GMing
But hey, haven't had my players beating down my door complaining yet so I have no idea if there's some pattern
my attempt at a powerful female character was an unnamed subordinate of a larger organization that was only around for one session and will probably never show up again

Sounds like that's a problem and you should probably look to fix it.
I really need help, I have trouble getting characters down and I get a basic concept but it feels impossible for me to expand on it, I ask help from a friend they just poop out good ideas left and right while I'm just stuck wondering why I can't do that, it's killing me I can't make a good character beyond the concept phase.

Don't sweat it too much if you can't lay down a mountain of backstory from the word go. Just start with knowing what you want to play, get that down, and then maybe a few cursory side notes if it's relevant to the campaign. Unless you have a very good idea of exactly what you want to do (which it sounds like you don't) it's usually more trouble than it's worth to micromanage every aspect of them before the game begins
Because ultimately, it's still a role playing game. If everything interesting has already happened to your character before the game starts, and they have nowhere to go or develop beyond adding 'did adventure X' to their life story, that's sort of missing the point
If you've got the groundwork, and have the crunch down, you shouldn't worry too much about everything else until you're actually playing. It usually takes everyone a couple sessions to get a feel for their new characters, and as you play and develop your own understanding, you can fill in any blanks you've got.
You can make a good character or tell a good story about anything, if you invest. You just have to start simple and refine it as you go. There's no real requirement to have a novel of a backstory or the most groundbreaking original concept to be able to play something you enjoy and who adds something to the game

Trying to find cyberpunk themed art of male characters who aren't ugly as sin and/or mostly obscured by armour is a pain, and trying to find stuff of female characters who look tough is equally hard. Bimbos and guys who could be called Butch 'Pecs' Armstrong is like 90% of what you can find.

Backstory is nice but whats important is that you have fun with your character. You can make the most bullshit derivative character in the world with a totally lame backstory, but bring them to life in game and you can make it your own.
