I just want to play the game because Killing Floor is fun.
The amount of gore in KF2 seems fine for the kind of game it is. It's a violent game, hell, look at Red Orchestra 1 or 2, that's way gorier than KF1 and it still fits in with the setting pretty well without overpowering the rest of the gameplay. It sounds like nitpicking to me, maybe he didn't really get to play enough to get much of an impression so he's reaching for whatever positives/negatives he can grab.
Instead of having people debate whether or not gore should be in the game, they could just add an on/off switch for the dismemberment and huge blood pools. That way both sides are happy.

The amount of gore can be seen as inappropriate due to a disjunction with the theme/tone of the rest of the game. It's possible for a ridiculously violent game to make violence and gore unbelievable in the context of its own universe.

I'm neutral on the gore personally. It doesn't add anything to the game for me, if it was gone I'd still enjoy the gameplay, if it is there, cool I guess but not a huge thing.

But Killing Floor is the name of the game, right? Seeing all these Zeds being redone to look absolutely terrifying and having an intent to murdalize you would only have an advanced gore system going in favor of the more horror approach TW is going with. Just having Zeds with 5 gore effects seem childish to me and I bet it would be satisfying to see the damage progress you did to a Zed after firing a shot of your shotgun.
The advanced gore system is one of the main aspects of this game, it's a [I]killing floor[/I], you're shooting up, slicing, exploding, and burning them alive with a badass arsenal. After fighting through waves of hundreds of mobs, it should look like one.
