The only source of info we have on this is telephone guy, who tells us that the animatronics will shove us into a suit if they catch us, and that the suit is incompatible with human life due to all of the metal structural elements inside of it that are meant for an animatronic exoskeleton. The only things that are recognizable are the eyes and teeth as they pop out the front. The ripped scene image of Freddy sitting in the storage room with[sp]real eyeballs with optic nerves[/sp]corroborates at least something similar to his story.
And blood and mucus around the mouth and eyes of the animatronics causing a health violation and another threat to shut down Fazbear's by the health inspector.
I'm going with being stuffed into the suits.

Yellow Freddy is difficult to categorize because the only time he [B]ever[/B] appears is (randomly?) on the Freddy poster. Seeing that poster guarantees that he will teleport into your room and stare at you until you either look at another camera to chase him away, or he gives you a nonstandard game-over and [I]shuts the game down[/I].
If Yellow Freddy is a physical suit that exists in the physical confines of Freddy Fazbear's Pizzaria, it is capable of teleportation and is able to get to you even faster than Freddy/20.
I personally believe Yellow Freddy is some sort of mental artifact of Mike going insane from the stress and terror of the job, if we assume the supernatural doesn't come into play. If the supernatural is in play, then it could be anything. An exoskeleton/suit animated by the soul of a serial killer and the one responsible for luring the children. Or the suit's possessed by some eldritch horror, or something. (I'm not mocking these theories, and some people have them, but it gets wishy-washy fast because we quickly run out of game content to support any definite statement about what Yellow Freddy is.)

Maybe that's how they recharge/refuel? There have been prototypes of a fuel device that breaks down organic matter, feeds it into some sort of microbial fuel cell, and converts it into a usable form of energy for machines. Technical term for a robot with such a mechanism is a "gastrobot", literally a robot with a stomach. (you can thank Dr Wilkinson for that name)
So if that were the case, they might have eaten previous security guards as a midnight snack, and found them more "palatable" than scarping down leftover pizza to get them through the night. Why else would Chica be heard eating stuff on the faulty camera?

This reminds me, I had a thought I wanted to throw out there.
Could it be that the use of organic parts is secondary to their use of human souls? Because the "IT'S ME" messages could imply that the previous security guard is the current "host" for these things, and he's trying to tell you what's happening with what little power he has.
Maybe he has more influence than that, too. Imagine if you had to take on the role of these animatronics, trapped in their endoskeletons, singing the same damn songs day in, day out, unable to control yourself, with no end in sight? At least, until you're set to "Free roam", and you can finally move.
Imagine if the only way out of this Hell, was to capture a new host, so you could finally be free of the machine, and experience merciful death. In doing so, you doom this new soul to the same torture, and you leave him the same, single exit.
Thematically, I can't see why it wouldn't fit. This faceless, dark parody of a corporation, when given the choice between spending lots of money on the programming and tweaking and keeping the animatronics in good repair, or employing some sort of (possibly supernatural) system that binds a human mind to slavery, forcing them into these suits, for far less money, would likely choose the latter.
Would explain the guard position as well. The only kind of person who would take- and continue to work- a job that pays far below minimum wage, AND poses mortal danger, is likely to be a good and proper homeless nobody. The kind that won't be missed.

Something I thought was interesting, that could tie into this idea, is that an old picture of Golden Freddy on the wiki that I think has now been removed had the filename Spirit.jpg

It still has articulation points on the shoulders and elbows similarly to the other suits. There's no room for someone to fit in there.

They're probably to stop the arms, elbows etc. from falling apart, having to be re-attached and stuff like that, so you can put an arm in and not be hurt.

This is exactly why discussing the canon is so fun though. When the story exists in such an abstract state then it is more or less left up to our own imagination, even if the developer has no concrete idea of exactly what's going on. Hell, especially if the developer has no concrete idea of exactly what's going on.
