The vault is actually just the service side of the counter in the electronics department.
One thing I really like about weapon customization is that, while there aren't that many guns, depending on what upgrade you use, the one you have can sort of become another. The shotguns all appear to have attachments that radically change how they look.
I really wish you could preview what mods that you don't have look like. Also, does that Para SMG have a drum mag? Kinda want to make it the Patriot.
You should be able to pattern weapons, or atleast color schemes.

In my personal stealth heists, the heavy armor has never stopped me from doing it, it seems like the guards don't care that you're wearing a heavy swat jacket stood in-front of them

It does stop you. The alert meter goes up faster than normal if a guard sees you when you don't have a mask on. If you have your mask on, the alert meter for a guard and a civilian rises higher than normal, and slows you down if you're trying to run to an outside civilian to tie him, which can fuck you over.
